Roasted Mashed Cauliflower

Mashed cauliflower is good, roasted garlic mashed cauliflower is next level amazing! If you’re not a fan of steamed cauliflower this recipe might open a whole new world for you. I know there are many versions out there but this one avoids the watery mess that steamed or boiled cauliflower can become. Give it a shot!

INGREDIENTS:

  • 24 ounces cauliflower florets (if huge cut into 1 inch pieces)

  • 1 Tablespoon avocado oil


  • 1.5 Tablespoons Roasted garlic (see notes!)


  • 2 ounces cream cheese

  • 2 Tablespoons butter

  • Salt & pepper

RECIPE STEPS:

  1. Toss cauliflower in avocado oil, season with salt & pepper, and spread out on parchment lined baking sheet. Try to not overlap the pieces. 


  2. Place into a 425 degree oven for 40 min until well browned. Flip halfway through. 


  3. Remove from oven and place in a bowl with all other ingredients, purée with an immersion 
blender (stick blender.) You can also do this in a food processor. 


  4. Enjoy! 


NOTES: Roasted garlic is an intense flavor bomb I love to keep in the fridge. You can make it slicing the top off of a head of garlic to expose the cloves. Add a tsp of avocado (or olive) oil and 
salt and pepper on top. Wrap in aluminum foil and roast for 45 min at 400. Let it cool and squeeze out into a bowl. That’s it! It will keep for a few days in the fridge, and even longer if you cover the mashed garlic with a small layer of oil.
