CHOCOLATE CHILI
Ok first of all a big note! You cannot use the sweetened versions of Keto Chow Chocolate (Regular or Core Line) to make this recipe. You don’t want sweet chili! The unsweetened Core Chocolate is perfect to not only add a depth of flavor, a protein boost, and truly fantastic texture. This is a thick rich hearty bowl of chili!
What I have included here as well are the spices I used. They add up to make a wipe your brow spicy chili. If you are more mild in your tastes, you can adjust accordingly but this is chili after all! Accoutrement like sour cream, guacamole and cheese can help mellow it out as needed!
Ingredients
1 packet Keto Chow Core Line Chocolate, Unsweetened
2 pounds 85/15 ground beef
3 ounces white onion, diced
3 ounces green pepper, diced
2 ounces roasted jalapeno, diced (click here for roasting instructions)
3 tablespoons tomato paste
2 cups chicken bone broth
2 tablespoons bacon fat (or fat of choice)
1.5 tablespoons chili powder
1 tablespoon chipotle powder
1 tablespoon cumin
2 tsp garlic powder
1 tablespoon ground oregano
0.5 teaspoon smoked salt
1 teaspoon black pepper
Instructions
Brown ground beef in a pot. Separate cooked meat and drippings using a strainer. Reserve both.
Add bacon fat to the pot and saute onion and green pepper until softened. Add jalapeno and cook for 2-3 minutes.
Add tomato paste and mix well. Cook over medium heat for 3-5 minutes. You’re cooking the raw flavor out of the paste and starting to brown it slightly. The maillard reaction at work!
Add all spices and continue to cook the pasty mixture for another 5 minutes.
Return the drippings to the pan, and add the broth. Bring to a simmer.
Add the beef and mix well. Return to a simmer for 30 minutes, partially covered.
Sprinkle Keto Chow powder over the chili and stir well, and fast. Do not let it sit or may clump. You want a thoroughly blended mix!
Simmer chili uncovered on low for 20-30 minutes. It will thicken. If too thick for your liking add a quarter cup to a half cup of water.
Ladle into bowls, garnish as desired and enjoy!
NOTES:
You can sub beef broth for the chicken broth if desired.
Also, if you do not have or don’t want to use chipotle powder, you can sub regular chili powder.
I also added an eighth of a teaspoon of Papa’s Pepper Extreme spice blend. This stuff is POTENT and incredible! Check them out if you like SPICY!
