DAIRY FREE KETO MEATBALLS

We just want to show you that you don’t have to be afraid of reducing dairy if it is becoming a problem or is a problem! This recipe uses a few tricks to make a easy tender meatball with no milk/cream or cheese needed. They can be served with anything you like! Pro Tip? This can also make an awesome meatloaf!

INGREDIENTS:

  • 16oz 93/7 ground beef

  • 1 cup pork rind crumbs

  • 1/2 cup beef bone broth, warmed

  • 4oz mushrooms finely diced

  • 2oz onion finely diced

  • 2 Tablespoons butter

  • 1 egg

  • 2 Tablespoons avocado oil

  • 1 Tablespoon Italian seasoning

  • 2 teaspoons black pepper

  • 2 teaspoons salt

RECIPE STEPS:

  1. Place crumbs in a bowl and add warm broth. Stir well and let sit.

  2. Sauté the mushrooms and onion in the butter over low heat. You are trying to cook out as much of the moisture and add flavor so a long slow cook will do this. This will take about 10 minutes.

  3. Remove from pan and let cool.

  4. Combine beef, egg, pork crumb mixture, vegetables and seasonings in a bowl. Mix well, get in there with your hands!

  5. Divide meat mixture into twelve equal balls and coat with the avocado oil.

  6. Bake on a parchment lined cookie sheet at 350 for 45 minutes.

  7. Serve with whatever you like or enjoy them alone! I had them with cauliflower rice and Trader Joe’s Vegan Pesto to keep the meal dairy free.
