JAMBALAYA “PASTA”

Based on an old chain restaurant favorite this is a tasty way to get plenty of fat and protein in a hearty pasta dish! Konjac noodles can be a great source of volume and are a solid vehicle for flavor as they don’t have much on their own! This one definitely brings the spice!

INGREDIENTS:

  • Miracle Noodles Konjac Ziti, full bag. (You can use any variety here that you like!)

  • 8oz Chicken breast

  • 4oz Andouille sausage (You can substitute a less spicy smoked sausage if desired!)

  • 4oz Mushrooms, sliced

  • 2oz Onions, chopped

  • 2oz Green peppers, chopped

  • 1 TBSP Avocado oil

  • 1/2 Cup Heavy cream

  • 2oz Pepper jack cheese, grated

  • 1 TBSP Grated Parmesan

  • 1/2 Tsp Salt

  • 1/2 Tsp Garlic powder

  • 1/2 Tsp Cayenne pepper

  • 1/2 Tsp Black pepper

RECIPE STEPS:

  1. Prepare the noodles by rinsing them well under cold water for a minute, strain, and then dry on a kitchen towel or paper towels.  

  2. Chop the chicken into 1/2 inch pieces and slice the sausage into 1/2 inch rounds.  

  3. Heat 1/2 TBSP of oil over medium high heat and add the chicken. Sauté until it begins to brown and then add sausage slices. Continue to cook for 3-4 minutes until chicken is fully cooked.

  4. Remove meat from the pan with a slotted spoon and add the remaining oil.

  5. Add pepper and onion. Cook until it begins to soften then add the mushrooms and sauté together for 4-5 minutes.

  6. Lower heat to medium and return the meat to the pan. Add the heavy cream and all seasonings. Bring to a simmer then add the grated pepper jack.

  7. Stir until cheese is melted and well incorporated. Serve with 1/2 TBSP of grated Parmesan on top and ENJOY!
