SUGAR FREE HOMEMADE BACON
Bacon prices are rising but pork belly can be an economical substitute, and with this recipe you not only get tasty bacon but you know exactly what’s in it!! If you’re cutting sugar out completely, this is a good one. It is a great recipe if you don’t have access to a smoker and want to make bacon at home.
INGREDIENTS:
2lbs pork belly with skin removed
2 tablespoons smoked salt*
1 tablespoon smoked paprika
1 tablespoon ground black pepper (freshly ground is best!)
1 tsp garlic powder
( * If you can’t find smoked salt you can use your regular salt and 1 tsp liquid smoke.)
RECIPE STEPS:
Pat dry pork belly well with paper towels and set aside.
Combine all dry spices well.
Coat pork belly on all sides with seasoning and place in a one gallon ziplock bag or air tight container, sprinkle in any remaining spices and add liquid smoke now if using it.
Seal bag and place in the refrigerator for 7 days. Flip and massage the bag every other day.
After 7 days, remove pork belly from the bag, rinse thoroughly and pat it dry.
Place pork belly on a baking rack over a baking sheet and place into a preheated 200 degree oven.
Bake until the internal temp reaches 150 degrees. May take a few hours.
Remove from oven, dry, allow to cool and wrap tightly in parchment paper and then foil. You can use plastic wrap if you do not have parchment.
Rest the bacon overnight in the fridge then slice to your desired thickness and cook as you would any bacon.
This will keep well in the fridge for a week and can be frozen easily for extended use.
