BACON WRAPPED HALIBUT
Grilling season isn’t over yet and this dish not only packs the flavor but is a great way to get some fish into your diet! The accompanying Lemon Basil Aioli is great with anything, including grilled chicken and even with canned tuna!
INGREDIENTS:
Twelve ounces halibut (weight after skin removed, cut into two filets)
Four strips of bacon
Lemon pepper seasoning of choice (I like Redmond’s Lemon Pepper!)
Two teaspoons olive oil
Salt to taste
Six tablespoons avocado oil mayo
One tablespoon chopped fresh basil
One tablespoon fresh lemon juice
RECIPE STEPS:
Place the halibut in a dish, coat with the olive oil and lemon pepper. Let it marinate for 30 minutes.
Combine mayo, basil and lemon juice (with a dash of lemon pepper!) to create the aioli. Ideally make this a few hours before to let the flavors combine.
Wrap each filet in two strips of bacon and secure with a toothpick. Do not overlap the bacon strips to give you the most coverage of the fish.
TO GRILL: Set grill to medium high heat (approximately 400-450 degrees). Cook over directh eat for about 10 minutes until bacon is well browned. Start seam side down. Flip 2-3 times during cooking. Watch for flare ups and get the fish out of that fire!
ON STOVE TOP: Heat skillet over medium high heat with 1/2 tablespoon of avocado oil (not included in the macros here) and place the fish in the pan seam side down. Cook until bacon is browned, approximately 8-10 minutes.
Divide the aioli and serve with the fish.
